I had an entire afternoon devoted to making Christmas cookies back in December. When I’m motivated enough to do something like this, I try to get out my camera and document. So, even though this is a little out of season now, I’m posting one of my favorite Christmas cookie recipes. Also, I will not judge you for making these in February. This kind of taste cannot be contained by a holiday. Also, if you made these today, they would hold you over to Girl Scout Cookie season, and we all know that’s a fairly huge deal.
Miss Chrone’s Old School Orange Balls
These were officially named by yours truly. My mom has this recipe thanks to her first grade teacher, Miss Chrone, who was a good friend of “Granny” (my great grandmother). Also, they are totally the type of thing older people would put on a Christmas cookie plate and you would be deceived by thinking they look disgusting, dry and flavorless next to the frosted sugar cookies. But low and behold, they are not. They are delish. And easy.
5 1/3 cups crushed vanilla wafers
1 cup powdered sugar
1/2 cup orange juice concentrate, thawed
(NOTE: THIS IS NOT EQUAL TO ONE CAN OF FROZEN CONCENTRATE. Pay attention, or end up running to the store for another can after you screw up the first batch, like me.)
2/3 cup melted butter
1 1/2 cup chopped pecans
Mix all ingredients together. Form balls from the mixture and roll them in powdered sugar. Store in an air-tight container in freezer. Best to freeze a few days before eating, but you will likely not be able to wait that long. Makes about 60.
