strawberry onion salad
Strawberry season, I will miss you. You make my life a little sweeter and my dinners a little more colorful. Too bad your fruit doesn’t last more than about a day, so I could justify stockpiling it. Don’t worry, I am consoled by the approach of comfort food season, even though it means I’m actually going to have to start working out. In honor of your departure, I’m sharing one of my favorite strawberry recipes:
Strawberry Onion Salad with Poppy Seed Dressing
Salad Ingredients:
1 bunch of romaine, torn
1 pint fresh strawberries, sliced
1 small red onion, sliced
This particular red onion destroyed me. My eyes stung the entire night after chopping it. So I would (sarcastically) suggest some kind of eye protective gear when making this particular, savory dish. Because you never know how potent those suckers are going to be.
In a large salad bowl, toss the romaine, strawberries and onion.
Poppy Seed Dressing ingredients:
1 cup salad dressing
1/3 c. sugar
1/4 c. milk
2 T. cider vinegar
1 T. poppy seeds
Combine ingredients in a small bowl or a jar with tight-fitting lid. Mix well. Pour over salad and toss lightly. Serve immediately.
Soooooooo good. Even though you feel like it might not be something you want to eat as you are spooning out a cup of salad dressing.
